Recette du boulanger Cider and Acacia Honey French Toast

Our master baker recipe

French Toast with a twist, for kids and grown-ups !

• 4 slices stale bread *
• 1 bottle of cider (750 ml)
• 2 vanilla beans
• 50 cl milk
• 6 teaspoons Acacia honey
• 2 Granny Smith apples
• 160 g butter
• 4 eggs

Slice open vanilla beans lengthwise and scrape the seeds with the tip of a knife. In a saucepan, combine the milk, 2 teaspoons of honey, the vanilla pod and the scraped beans. Bring to a boil, remove from heat, pour in a shallow bowl and set aside to let it cool.
Pour cider in a saucepan, bring to a boil, add 4 teaspoons of honey, stir and let it reduce to about 10% of the original amount.
Peel and core apples, and cut in 1 cm pieces. Melt 40 g of butter in a frying pan over low heat, add diced apples and cook until they start browning.
Once reduced, whisk 80 g of diced butter into the honey and cider syrup, then add cooked apples and cinnamon and let it cool.
Beat eggs in a shallow bowl. One at a time, soak both sides of bread slices first in the vanilla flavored milk and then in the egg mixture. Over low heat, melt 40 g of butter and brown the bread on each side (approximately 2 to 3 minutes per side).
Serve slices on individual plates, sprinkle with icing sugar and garnish with the apple, honey and cider syrup.
