Dipping Duo
Hummus
Serve with 12 slices of grilled baguette slices or any bread of your choice
:
• 400 g canned chick peas, drained
• 2 tablespoons tahini
• 2 tablespoons lemon juice
• olive oil
• 1 teaspoon paprika.
• toasted pine nuts (optional)
Combine ingredients in a food processor and puree until smooth. Add olive oil (or water) to obtain a soft, creamy consistency. Season to taste with lemon juice. Transfer to a serving dish and garnish with drops of olive oil and pine nuts. Sprinkle with paprika.
Baba ghanoush
Serve with 12 slices of grilled baguette slices or any bread of your choice
:
• 1 large eggplant
• 1 tablespoon tahini
• 1 pressed garlic clove
• juice of one lemon
• salt and pepper
Preheat oven to 200 ºC (350 ºF). Roast eggplant for 30 minutes or until flesh is soft. Let stand until cool enough to handle, remove the skin and dice the flesh. Transfer to a food processor, puree until smooth and add the garlic, tahini and lemon juice. Season to taste.
