Citrus Fruit, Mascarpone Cheese and Maple Caramel Croissants

4 servings

• 4 butter croissants *
• 500 g mascarpone cheese
• 4 egg yolks
• 100 g sugar
• juice of 2 lemons
• 3 grapefruits
• 5 bloody oranges
• orange flavored maple syrup *

Combine egg yolks and sugar in a bowl and beat with a electric mixer for 3 minutes until mixture whitens. Slowly stir in mascarpone cheese and lemon juice. Store in the refrigerator until needed. Peel oranges and grapefruits, cut off the white pith and cut between segments leaving only the flesh. Add juices to the orange flavored maple syrup. Place fruits and syrup in a saucepan and heat slowly for 30 seconds. Remove fruits and heat syrup until reduced to a caramel consistency.
Cut croissants in half lengthwise, spread mascarpone mixture on bottom halves, place citrus fruit and spread another layer of mascarpone mixture. Replace top halves.
Serve with fruits and maple caramel on the side.
