Capsule du chefMr Séguin's Sandwich

4 servings (sandwiches)

INGREDIENTS

• 8 olive, garlic and herb bread slices *
• Au Pain Doré Gourmet Basil Pesto *
• Au Pain Doré Gourmet Confit Tomatoes (3 tomatoes per sandwich)*
• 1 slice of eggplant per sandwich
• 1/2 slice of de Paillot (Alexis de Portneuf) fine goat cheese log per sandwich. *
• ½ thinly sliced garlic clove
• 4 tbsp of extra virgin olive oil
• Salt and pepper to taste

PREPARATION

• Cook thinly sliced eggplants in a skillet or on a gril with a
dash of olive oil adding salt and pepper on top.
• Spread Basil Pesto on one slice of the sandwich. Also spread evenly
goat cheese, cooked eggplant slices and garlic.
• Cut Confit Tomatoes into thin slices and spread on the remaining slices of bread.
• Gather into sandwiches.
